A Boston butt pulled at 145°F is safe and will not shred. It slices, roughly, and it chews like a pork roast, because the connective tissue is still connective tissue. That isn't a failure. It's a different dish, and it takes about a third of the time.
Working out your own number
Weigh the roast before it goes in. The package label is fine. A kitchen scale is better if you trimmed the fat cap or removed netting, since everything downstream scales off that raw mass.

The chart's row stops at 6 pounds. Above that I've narrowed the range myself, on the nonlinearity the same document demonstrates. The rule behind the last column is the top of the window plus ninety minutes: an hour for the rest, thirty minutes of slack. Run your own weight through it and you will not be the person holding twelve people at the table with a probe in one hand.
The strongest argument against everything I've just written is that a range is not a plan. If you are serving at seven, "somewhere between five and eight hours" helps you not at all, and telling a host to cook to feel sounds like a cook dodging the hard part. That objection is fair and I grant all of it. Dinner keeps an appointment even when the pork won't. My answer is that the fix is a hold rather than a better formula. A finished butt keeps for hours without losing anything. An unfinished one cannot be hurried without cost. Plan to be done early and hold it; never plan to be done on time.
Pick an oven temperature, then find out what it really is
Until about 2019 I ran oven butts at 225°F, because that was the number in every smoker recipe and I had carried it indoors without examining it. I stopped. Then there's the question of whether your oven is at the temperature it claims. ThermoWorks reports that most ovens sit 25 to 50°F off their set point, and cites America's Test Kitchen's finding that ovens set to the same number can vary by as much as 90 degrees between units. ATK's own rule of thumb is that a well-calibrated oven still cycles as much as 25 degrees above and below target, and that landing consistently within 25 degrees is the standard to hold your oven to. The built-in sensor sits in a corner of the box, nowhere near the roast.
A cheap oven thermometer on the rack beside the pan solves this permanently. Mine reads 288°F when the dial says 275°F, so I set the dial to 260°F and stopped wondering why my times ran short. Do that measurement once and every per-pound estimate you make afterward gets more honest.
Where the probe goes, and how many times
FSIS gives the instruction plainly: thickest part, not touching bone, fat or gristle. A bone-in Boston butt carries a section of the blade bone through its middle, and bone conducts heat differently from the muscle wrapped around it.
I learned that the hard way. Early on I probed a bone-in butt hard against the blade bone at hour six, read 205°F, congratulated myself, and pulled it. It fought the forks. The bone had run maybe fifteen degrees ahead of the meat beside it, and the thickest wedge of muscle was nowhere close. It went back in for another ninety minutes. Dinner landed an hour and a half late and eleven people ate a lot of bread. Now I take three readings minimum, both sides of the bone and the deepest part of the thickest lobe, and I believe the lowest one.
A leave-in probe draws you the curve, so you can watch the stall start and, more usefully, watch it break. An instant-read gives you the truth in several places at once. If you own one thermometer, make it the instant-read.
The stall, and why it eats your estimate
Greg Blonder's testing at AmazingRibs settled what causes it. The stall is evaporative cooling, the roast sweating and cooling itself the way you do on a hot day. He probed a chunk of pure fat and a water-soaked sponge, cooked them side by side, and watched the fat climb evenly past 200°F while the sponge tracked a brisket's curve almost exactly. The older explanation, that collagen conversion causes the stall, doesn't survive the foil test: wrapped meat converts its collagen perfectly well and never stalls.
Expect it to begin anywhere between 150°F and 170°F, depending on the roast and the cooker, and to hold there for hours. Raising the oven temperature shortens it. Near 300°F it may not show up at all. That single fact is the honest reason to cook a weeknight butt hotter than barbecue orthodoxy allows.
What you do about it is a trade, and the trades are not equal:
- Uncovered the whole way. Best bark, slowest cook, full stall. This is what I do when time isn't the constraint.
- Foil, wrapped tight from about 160°F. The fastest option available to you. It stops surface evaporation, so the stall simply ends. Bark goes soft, and Blonder's caveat is worth respecting: a loose wrap that leaks lets the roast keep cooling, which hands you the softened bark without the speed.
- Butcher paper. Breathes slightly. Slower than foil, better bark than foil, an honest middle.
- Lidded Dutch oven. This is a braise, whatever the recipe calls it. No bark at all, trapped steam, very tender meat, and drippings worth defatting and pouring back over the pulled pork.
Searing is a color decision at either end of the cook. A hard sear, or a twenty-minute blast at 450°F, seals nothing in and shortens nothing.
Test the feel, not only the number
Start checking at 195°F. Slide the probe into the thickest part and pay attention to your hand, not the display. It should go in with about the resistance of soft butter. Any drag or tightness means the roast isn't finished, whatever number is showing.
Collagen conversion is a time-at-temperature reaction rather than a line you cross. Meaningful conversion starts around 160°F and accelerates near 180°F, and it takes hours at those temperatures. Flash-heating the center of a shoulder to 203°F in minutes would leave it as tough as it started, which is the clearest evidence that the number alone was never the endpoint.
Probe several spots, because a butt can be slack on one side and tight on the other. When it resists, shut the oven, give it another thirty minutes, and check again. I've taken butts to 207°F waiting for the feel to arrive, and I've had one go completely soft at 197°F. Both were right.
Rest before you pull
The three-minute safety rest was satisfied hours earlier. This rest is a texture operation. ThermoWorks recommends at least an hour, and recommends burping the wrap first, opening it for a minute or two so the roast stops climbing and doesn't turn mushy while it sits.
Carryover is where I'll stop short of giving you a figure. The standard line is a 5 to 10°F rise. Experienced cooks running logging thermometers through the rest report the opposite, a slow decline, and I have never put a home-oven butt on a data logger myself, so I won't take a side on a number I haven't measured. What I can vouch for, from instant-read checks at the end of a lot of long holds, is this: a butt double-wrapped in foil, dropped into a cooler that's been preheated with hot tap water and packed around with towels, is still above 140°F four hours later. 140°F is the FSIS hot-holding floor, so that hold is a safe one as well as a convenient one.
